Wedding Trends has a recipe for creating this sparkling type of parfait. It can be served up at your wedding for those on a diet. It is very simple to make this kind of parfait. The directions are usually on the back of the box of white grape or white peach flavored jello.

Using club soda, seltzer or ginger ale follow the instructions on a box of Sparkling White Grape Jell-O. Chill the Jell-O in champagne flutes and add a ribbon or sparkling garland from your local party store. By the way you can even use real champagne if you want. Another trick is to slightly set some jello in another bowl and then froth it up into foam. Pour this on top to make it look like there is a freshly poured glass of champagne in the glass. You can then also drop a strawberry on top for an authentic touch.
